<p>I got rather off track this past week, but still managed to lose -1.5lbs.  I don&#8217;t know what I did to deserve that, but I&#8217;ll take it!  Granted we did have a c-r-a-z-y week with a family member passing away, another family member in the hospital and so on.  I&#8217;ve noticed that I tend to derail when life becomes stressful.  I need to work on that!</p>
<p>So today, it&#8217;s back to eating healthy and exercising.  I&#8217;m actually excited.  I&#8217;ve felt like a water buffalo for the past two days and I think it&#8217;s because we&#8217;ve been eating out so much and lazing around.</p>
<p>Menu for the week:</p>
<p><strong>Monday</strong>:  Mediterranean Meatloaf Muffins (i&#8217;ll post the recipe tongiht!) and Sweet Potato Fries</p>

<p style="text-align:left;"><strong>INGREDIENTS:</strong></p>
<ul>
<li>1 Package Tofu Skirataki Spaghetti Noodles (House Foods)</li>
<li>1 tsp. EVOO</li>
<li>8oz Boneless Chicken Breast</li>
<li>2 Cloves</li>
<li>1 large Shallot</li>
<li>6oz Snap peas</li>
<li>1/3c. Peanut Butter</li>
<li>1/4c. Light Soy Sauce</li>
<li>1/4c. Thai Red Curry Paste</li>
<li>2 tbsp Tomato Paste</li>
<li>6c. Fat Free Chicken Broth</li>
<li>1&#8243; piece Fresh Ginger, pressed through garlic press</li>
<li>½  Head Napa Cabbage, shredded</li>
<li>½ Light Apple Juice</li>
<li>1c. Bean Sprouts</li>
<li>1/4c. Peanuts, unsalted</li>
<li>1tbsp Cilantro (garnish)</li>
</ul>

<p><strong>DIRECTIONS:</strong></p>
<p>1.  Rinse Skirataki in colander thoroughly under cold water.  Pat dry and set aside.</p>

<p style="text-align:left;">2. Meanwhile, in a soup pot, heat the oil over medium heat. Add the chicken and garlic and shallot.  Cook, stirring, until the chicken is opaque, about 5 minutes. Transfer to a plate.</p>

<p>3.  Add the peanut butter, tamari, curry paste and tomato paste to the pot and stir. Increase the heat to medium-high and whisk in the chicken broth; add the ginger.</p>

<p>4.  Bring to a boil, then stir in the snap peas and cabbage and cook until cabbage is wilted about 2 minutes. Return the chicken to the pot and stir in the apple juice.</p>

<p style="text-align:left;">5.  Divide the pasta among 4 bowls. Ladle the soup over the pasta. Top with the bean sprouts, peanuts, scallions and cilantro.</p>

<p>Did you have a nice Easter? We did! My husband and I entertained all weekend! His family came down on Saturday, His mom on Sunday, and we had friends over last night for games and finger foods. It was a great weekend, but I’m exhausted. The good news is, well besides “He is Risen”, is that the dishes are all done!</p>

Menu Planning will be light this week because we have a ton of leftovers!</p>

2	cans (14 oz each) reduced-sodium chicken broth<br />
2	medium carrots, cut into 1/2-inch pieces (1 cup)<br />
1	medium sweet potatoes, peeled, cut into 1/2-inch pieces (1 cup)<br />
1	medium onion, finely chopped (1/2 cup)<br />
1	medium stalk celery, cut into 1/2-inch pieces (1/2 cup)<br />
1	bag (16 oz) dried lentils (2 1/4 cups), sorted, rinsed<br />
1	package (6 oz) sliced Canadian bacon, coarsely chopped</p></div>
<p>DIRECTIONS:<br />
1.  In 3 1/2- to 4-quart slow cooker, mix all ingredients. Cover; cook on</p></div>

<p>Boneless Chicken (20oz)</p>
<p>1 c. Ketchup</p>
<p>12oz Diet Coke</p>
<p><b>DIRECTIONS:</b></p>
<ol>
<li>Put chicken a non-stick skillet.  Pour ketchup and diet coke over the chicken.</li>
<li>Turn the heat to Medium High and cook chicken for 45 minutes, stirring occasionally.</li>
<li>Cover, reduce heat to simmer and cook another 15 minutes or until liquid has been absorbed.</li>
<li>Shred chicken with a fork and serve.</li>
