I have a recipe from the WW's Simple and Classic Homecooking for a 6pt per serving Cassoulet. It still has most of the basics covered. If you would like the recipe just email me and I can send it your way. I am making it for the first time this week. I cannot wait to try it.

Hi Amanda,
What a great blog this is! I'm quite intrigured by the white bean cassoulet as well.. . and thanks for the link to the Sweet Potato, Black Bean and Quinoa Bites! Yes, an unusual combination of flavors, but they do actually work really well together. The key is not to underbake them before cutting! Hope you enjoy them if you do give them a try.

Now I'm off to check out your archives!

I made Pioneer Woman's pork this week too. I turned mine into carnitas. Once the pork cooked all day I put about 2 tbl of oil into a pan on high heat and then covered the pan with the shredded meat and let it crisp up for a couple of minutes. Tastes great on corn tortillas with whatever fixings you like.

With the leftovers I'm probably going to make bbq pulled pork sandwiches.
