Every other Thursday a group of friends from church come over to our house for “Life Group”. The idea of Life Groups is “doing life together”. Basically we get together and just hang out, eat snacks, play games, watch movies, pray, etc. It’s been a lot of fun so far. The only downside is that it’s a lot of work to host it at our house! I tend to go overboard with the refreshments, which has been a bit of a strain on time and resources (have groceries gone up like crazy or is it just me?). So this week I asked each couple to bring a dessert. And to make it fun, it has to have Strawberries incorporated into it somehow.
That’s where YOU come in. My creative juices are on vacation, so I need your help coming up with a figure friendly dessert that has Strawberries in it!
I’ll sweeten the deal by sending the person with the winning recipe a set of six, homemade, strawberry themed Marble Magnets!

Can we enter multiple times?
Spring Berries with Whipped Ricotta Cream
Servings: 4
Points per serving: 1
2 cups fresh sliced strawberries
1 cup blueberries
1/4 diet lemon-lime soda
1 T mint leaves, fresh, chopped
1/2 cup fat free ricotta cheese
2 1/2 tsp lemon zest
2 T fat free sour cream
Toss strawberries, blueberries, 2 tablespoons soda and mint together in a bowl and set aside for 10 minutes. Meanwhile combine ricotta, remaining 2 tablespoons of soda and lemon zest in another bowl and whip until light and fluffy. Fold in the sour cream. Fill four bowls with 3/4 cup of the berry mixture and top with 1/3 cup of the cream.
I think Mrs. Odom may have already won, but I would make fresh frozen yogurt. you can’t really store this, so you’d need to make it right before eating it.
1 cup frozen strawberries
1 frozen banana*
1 (6oz) container light yogurt (vanilla or cherry vanilla is best)
light vanilla soymilk (70 calories per 8 oz, Vitasoy brand)
optional toppings:
granola (GoLean Crunch is my fav)
almonds or salted peanuts
fresh sliced strawberries, raspberries or blackberries
Break banana into chunks and combine the first 3 ingredients in a blender. Process and add soy milk as needed until blended but VERY thick. Pour into small dishes and sprinkle optional toppings on top.
For appearance, I would place a strawberry slice in the middle with one almond adjacent to it. Then, sprinkle granola around the outside.
This tastes just like eating frozen yogurt except there is no added sugar or guilt. You could also add any other frozen fruits to the mix but you’ll need more soy milk.
* To freeze the banana, remove from peel and wrap in saran wrap. Leave for a few hours or overnight in the freezer.
